Brown Butter Chocolate Chip Cookies
these are the kind of cookies that make you stand in the kitchen eating one straight off the tray pretending you’ll “just have half”.

Ingredients
- 200 g butter
- 150 g brown sugar
- 1 egg
- 1 tsp vanilla extract
- 300 g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 tsp salt
- 200 g chocolate chunks

Cube the butter and melt it in a saucepan over medium heat, stirring constantly.

Keep going until the froth settles down, the butter turns a deep golden brown, and you can see dark specks at the bottom.

Let it cool slightly.

Whisk together the brown butter and sugar.

Add the egg and vanilla extract and mix again.

Add the flour, baking powder, bicarbonate of soda and salt.

Mix until a dough forms, then fold through the chocolate chunks.

Roll tablespoon-sized amounts into balls.

I made 8 because I have absolutely no self-control around cookie dough, but you could definitely get more if you’re stronger than me.

Freeze overnight.

Bake at 180°C for around 20 mins until golden.
