Sticky Date & Pecan Banana Bread

Soft, sweet and perfectly sticky, this banana bread is the perfect cosy autumn bake, topped with creamy date caramel and crunchy pecans

Ingredients

  • 3 ripe bananas
  • 100 g pitted dates
  • 2 eggs
  • 1 tsp vanilla essence
  • 100 g oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • pinch salt

date caramel

  • 100 g pitted dates
  • 80–100 ml hot water

toppings

  • 30 g crushed pecans

Directions

    Preheat oven to 180°C (160°C fan) and line a loaf tin.

    Add all banana bread ingredients to a blender and blend until smooth.

  3. 3

    Pour into the tin and bake for 35–40 mins, or until a skewer comes out clean and let cool.

    For the caramel: soak 100g dates in hot water for 10–15 mins, drain, then blend until it forms a smooth caramel texture.

    Poke holes in the bread with a skewer and spread the caramel on top and sprinkle with crushed pecans.
