Ingredients

  • 100 g unsalted butter
  • 100 g brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 220 g plain flour
  • 40 g cocoa powder
  • 1 tsp baking powder
  • 0.5 tsp bicarbonate soda
  • 0.5 tsp instant coffee powder
  • 0.5 tsp salt
  • 100 g dark chocolate, chopped
  • 100 g milk chocolate, chopped
  • 100 g white chocolate, chopped

Directions

  1. 1

Preheat the oven to 180°C (160°C fan) / 350°F and line a baking tray with parchment paper.

  2. 2

In a large bowl cream together the butter and sugar until light and fluffy.

  3. 3

Beat in the egg and vanilla extract.

  4. 4

Add in the flour, cocoa powder, baking powder, bicarb soda, coffee and salt, then gradually fold this into the wet mixture until combined.

  5. 5

Stir in the dark, milk and white chocolate chunks.

  6. 6

Scoop out two tablespoons of dough, roll into balls and place them onto your tray with space between each for spreading.

  7. 7

Freeze for one hour so they maintain their shape and don't spread when cooking!

  8. 8

Bake for 10–12 minutes until the edges are set but the centres remain slightly soft.

  9. 9

Leave the cookies to cool on the tray for 30 minutes before devouring!
